September Bakin' Friends

  It's Bakin' Friend reveal day!!!!

This months secret ingredient was zucchini!!! And since I love, love, love zucchini I was so excited when this months package came in the mail.



So excited that I started ripping the goodies open before taking pictures. Opps :) 



My Bakin' Friend this month was Renee from What' 4 Dinner Mama. Aren't those the cutest little butterfly stickers?



She sent me Coconut-Date Cake Bars and although they were a little beat up from the trip here they were so delicious.

August Bakin' Friends

Wow...August went by so fast and its already Bakin' Friends Time!!! 
This months secret ingredient was PRETZELS!!! I get so excited every month when my Bakin' Friend package comes. I just can't wait to rip that sucker open and see what's inside.
This month I received my goodies from Dawn who is the bakery/blogger behind Butter and Sprinkles
She sent me White Chocolate Peanut Butter and Pretzel Cookies with Sea Salt and they were delious. I just loved the sea salt, it really brought out the peanut butter flavor. 

And Dawn you are a girl after my own heart because not only do I love your hand writing but you gave me the ingredients in weight also!!! Woot Woot :)

Rocky Road Brownies

So I had just gotten back from the grocery store yesterday when I thought "crap...I forgot to get dessert", so I sat down with in recipe box in front of me and starting thumbing through all of the recipes I have. 
I definitely didn't want to get back out to the store so I have to find something that I already had all the ingredients for. I had some mini marshmallows left over from when I made these S'mores Chocolate Chip Cookie Bars, so I wanted to use thoem before they went bad. 
I have two different Rocky Road recipes, one for brownies and one for a crunchy cookies type of a bar. Well if you know me and my family we are brownie obsessed people, so it wasn't a hard decision to make. 

Recipe
1/2 cup (1 stick) unsalted butter, melted
1 cup (200 grams) granulated sugar
2 large eggs
1 tsp vanilla extract
1/2 cup (65 grams) AP flour
1/3 cup (33 grams) cocoa powder
1/2 tsp baking powder
1/2 tsp kosher salt
1 cup mini marshmallows
1 cup (170 grams) chocolate chips
1/2 cup chopped nuts (walnuts or almonds work best)

- Preheat oven to 350 degrees F.
- Grease a 9 inch square baking pan.
- In a large bowl whisk together the butter, sugar, eggs and vanilla. 
- Stir in the flour, cocoa powder, baking powder and salt. 
- Pour the batter into the prepared baking pan. 
- Bake for 18 to 20 minutes. 
- Sprinkle the top with the chocolate chips, nuts and marshmallows. 
- Return to oven and bake for 2 minutes. 
- Let cool on a cooling rack.
